The Lunch Time Dilemma
When I was a child I never had to think about lunch. When I was really young, my mother bought four hoagies from the local dime store, cut them in half, wrapped them up in Saran Wrap and put them into the freezer, one to be doled out everyday. In addition to that, I was given a bag of Lays potato chips, and one of those famous "Moon Pies. Done!
That was it...and oh yes, cold milk was provided for five cents a day. That was my lunch every day of the week except Wednesdays which was the PTA's hot dog day. What was there to think about? So easy and I never got tired of eating the same thing.
In high school the school cafeteria took all of the guess work out of the afternoon meal.
Even in college I would pick up a prepared sack lunch in the university cafeteria.
NO WONDER I AM LUNCH CHALLENGED!!!!
I won't say how many years later (but they are in the double digits), I am lost in a sea of lunch options in which I really don't know what to choose from. I eat very healthy breakfasts and dinners, but I am clueless when it comes to lunch. Even though I was satisfied with what was provided for me, I love food, and am especially fond of beautifully presented healthy food. I think that's why I get so lost. I want something beautiful, easy to prepare, and not too cumbersome to eat at my desk or dare I say while I'm driving in the car.

So voila! My quest for taking the mystery out of the mid day meal has begun. I will conquer this and share my findings in this blog devoted to "The Art of Lunch"
